A New Comfort Food Recipe, Made with Simple, Local Ingredients

fosterfarms-chicken-stew-recipe

Cooler weather calls for comfort food. But when I think of comfort food I think of carbs, carbs, and extra carbs. It’s all the yummy food that’s certainly not on the healthy side and definitely not fresh. An overload of processed foods to be exact.

Recently, however, I accidentally created a healthier version of a comfort food recipe. It all started with the change in weather and the so-called Kinder bug. Mia’s kindergarten school bug for lack of a better word.

fosterfarms-chicken-stew-recipeIt seems that the Kinder bug made its way back into our home for the third time in just 3 months. And let me just say, I’ve made multiple batches of chicken soups and stews because of it. So it’s safe to say I’ve perfected a recipe that is not only delicious but also on the healthier side (less sodium,  antibiotic-free chicken, and local grown fresh ingredients).

Mexican Chicken Stew

Cereal Con Cariño

Cheerios-Cereal-Con-Cariño

Breakfast time is usually chaotic in our home. The baby wants to be fed quickly and then nursed right after while our oldest, Mia, wants her usual PB hold the jelly sandwich and a side of fresh sliced strawberries or fresh steel cut oatmeal with pasas. But some days, all she really wants is a big girl bowl of Cheerios with a side of fresh fruit. Those days are reserved for when she’s been extra good. But to be honest, it’s a win-win for us to serve her Cheerios as it’s a healthier gluten-free cereal and there’s no cooking involved in making it. Hence, less dishes for this mama to wash.

Cheerios-Cereal-Con-Cariño

And although our big girl already knows how to serve herself, I still love serving her a bowl of cereal for breakfast. I also give her tons of kisses and a big morning hug along with it. It’s my way of giving her cariñitos and showing her how much I care about her and love her. A morning tradition I plan to keep doing forever. Well, as long as she lets me that is.

Cheerios-Cereal-Con-Cariño

Sometimes we just have tea party picnics in our backyard, fill our tea cups with Cheerios and read books. And speaking of, how neat are these Lil’ Libros bilingual books? We love reading books to our girls in both Spanish and English. And more importantly, taking them to events that focus on our cultura. These Lil’ Libros books tie them both (culture and language) perfectly. Be sure to stay tuned for a giveaway this week.Cheerios-Cereal-Con-Cariño

Today, we partnered up with Cheerios for Hispanic Heritage month to share their exclusive “Cereal con Cariño” video series. The videos bring together familiar faces over a bowl of General Mills cereal to chat about how to “demonstrar cariño” to our loved ones.  General Mills believes food brings people together and cariño can happen anytime, even over a bowl of cereal.

Be sure to visit the General Mills site to also download recipes, learn about upcoming Fiestas Patrias and Dia de los muertos events and find coupons and deals on your favorite cereal.

Apple Pumpkin Pie Spice Overnight Oats

Apple-Pumpkin-Overnight-Oats-Apple-PickingA few weeks ago, we made our way out to the apple orchard. It’s now part our fall traditions along with going to a pumpkin patch. And although the weather in southern California never quite makes it feel like it’s truly fall, we were excited to hear that cooler temperatures were expected on our apple picking day. By cooler, I mean in the 70s (ha! I know not so cool in other parts of the states). But once we arrived up the mountain top, we realized that the weather channel must have been talking about another city. It was actually hot and that’s when I realized that wearing black might not have been such a great wardrobe choice after all.

But regardless, we all had a blast and more so as my brother-in-law, sister-in-law and nephews (the girls’ primos) joined us as well. And, seriously, how cute are these kiddos? Biased over here but love seeing how excited they get when they see each other and play together. #CousinLoveApple-Pumpkin-Overnight-Oats-Apple-Picking

Apple-Pumpkin-Overnight-Oats-Apple-PickingWhile most people would make an apple pie or high in calorie treat with their orchard apples, we made a healthier and delicious way to get our apple pie fix. It’s great for parents that are on-the-go as it’s made overnight and a perfectly sweet way to start your day. Enjoy!apple-pumpkin-spice-oat

Coffee is My Vice

nescafe-ricky-martin-concert

Many of you know by now that I’m all about my morning cafésito. It’s the one thing I crave and have to have the minute my alarm clock goes off in the morning (ahem! our 9-month-old). And if you follow on Instagram, you also know that we have a nocturnal baby that keeps us up through the night still. For that reason, coffee is an absolute must around here.

But my love for coffee didn’t just stem from parenthood and all of the sleepless nights it comes with. In fact, It’s always been there since I could remember. I know, sounds crazy but hear me out.

I remember as a kid, my father waking up around 4:30am-5am to prepare his morning coffee before heading out to work. Since he worked long hours, and usually six days a week, I rarely got to see him. Every morning, though,  I would wake up to the smell of his fresh cup of Nescafé coffee and would join him in the kitchen. It was our few minutes of bonding time before he headed off to work. He’d serve me a cup of warm milk and would add a few drops of his Nescafé coffee just to get the milk semi off-white and make it seem as if I too was having a cup of coffee with him. We chatted about school, his work, and our Sunday plans. Sunday being his only day off from work and would spend it taking us wherever we wanted to go.

Nescafé has always been a big part of our familia. And it’s safe to say we’re definitely NESCAFEteros.

Today, we’ve partnered up with Nescafé to invite you to take a chance and make a great moment happen. A private Ricky Martin concert to be exact!nescafé-ricky-martin-concert

Is it crazy that we’re already talking about all things fall? Sweater weather, apple picking, pumpkin spice everything and delicious homemade soups that will warm everyone up on a chilly autumn day. Yes – we’re ready for it all over here!

Today, we’re sharing one of our favorite healthy fall recipes. This pumpkin-red lentil soup is not only delicious but jam-packed with protein and fiber and has a smooth velvety texture. It’s also more filling than your average pumpkin soup and perfect for family members that prefer savory vs sweet soups.

Organic-Pumpkin-Red-Lentil-Soup-Protein

We love pairing our fall soup with Annie’s Homegrown organic certified cheddar bunnies. These cute bunny crackers are seriously delicious! Mia, our kindergartener, got us hooked on them. She loves them so much that she snacks on them while at school, while we run errands or during movie nights at home. I always need to make sure we have a box or two of these crackers stashed away in our pantry at all times.
