Many of you know by now that I’m all about my morning cafésito. It’s the one thing I crave and have to have the minute my alarm clock goes off in the morning (ahem! our 9-month-old). And if you follow on Instagram, you also know that we have a nocturnal baby that keeps us up through the night still. For that reason, coffee is an absolute must around here.

But my love for coffee didn’t just stem from parenthood and all of the sleepless nights it comes with. In fact, It’s always been there since I could remember. I know, sounds crazy but hear me out.

I remember as a kid, my father waking up around 4:30am-5am to prepare his morning coffee before heading out to work. Since he worked long hours, and usually six days a week, I rarely got to see him. Every morning, though,  I would wake up to the smell of his fresh cup of Nescafé coffee and would join him in the kitchen. It was our few minutes of bonding time before he headed off to work. He’d serve me a cup of warm milk and would add a few drops of his Nescafé coffee just to get the milk semi off-white and make it seem as if I too was having a cup of coffee with him. We chatted about school, his work, and our Sunday plans. Sunday being his only day off from work and would spend it taking us wherever we wanted to go.

Today, we’re sharing one of our favorite healthy fall recipes. This pumpkin-red lentil soup is not only delicious but jam-packed with protein and fiber and has a smooth velvety texture. It’s also more filling than your average pumpkin soup and perfect for family members that prefer savory vs sweet soups.

Pumpkin+Red Lentil Soup

Prep Time: 30 minutes

Serving Size: 6

Pumpkin+Red Lentil Soup

Ingredients

  • 1 cup chopped pumpkin (or butternut squash if pumpkin is not in season)
  • 1 Tbsp sea salt
  • 1 cup dry red lentils
  • 1/2 cup chopped red onion and shallots
  • 6 cups water
  • 1/2 tsp. ground cumin
  • A dash of paprika and turmeric
  • Fresh organic dill and Annie's Homegrown Cheddar Bunnies
  • Shredded mozzarella, salt and ground black pepper (optional)

Instructions

  1. Add onion and shallots to sauce pan; cook for 1 minute, or until tender.
  2. Add pumpkin, red lentils, and water. Bring to boil. Reduce heat; gently boil, covered, for 20 to 25 minutes, or until pumpkin is soft and lentils are fully cooked. Remove from heat.
  3. Place soup in a blender or food processor. Leave about ¼ of soup in saucepan to make the soup chunkier or place all of soup in blender to make it completely smooth.
  4. Return soup to sauce pan over medium heat. Add cumin, paprika and turmeric. Season with salt, and pepper, if desired; cook, stirring constantly, until soup is hot.
  5. Serve with fresh organic dill and Annie's Homegrown Cheddar Bunnies Makes 6 servings.

Ingredients

  • 1 cup peanut butter
  • 2 prepared flax eggs | ( 1 tbsp ground flax to 3 tbsp water per egg)
  • 2 tbsp honey
  • 1 1/4 tsp baking soda
  • 1 1/2 tsp vanilla

Instructions

  1. preheat over 350°F
  2. Start by making the prepared flax eggs.
  3. Put 2 tbsp ground flax and 6 tbsp water in a small bowl. Whisk together and let sit in your refrigerator for 30 minutes.
  4. While you wait, get all other ingredients ready and into a large bowl.
  5. Line 2 cookie trays with parchment paper.
  6. Mix all ingredients together including your flax eggs.
  7. Scoop out cookie mixture onto your trays.
  8. Use a fork to make a fun design - push fork down in each direction!
  9. Bake for about 10-12 minutes.

Chile-lime Watermelon Popsicles

Tajin-Watermelon-pops-disneyWhat fruit comes to mind when you think about summer? Ok – aside from pineapple and perhaps coconut. Watermelon for sure, right? It’s so refreshingly good during hot summer days.

These watermelon popsicles are by far the easiest thing I’ve ever made in our kitchen. Not to mention, they’re on the healthy side. Your kiddos will surely love them too as the seasoning is not too spicy but rather adds just a hint of chile and combines sweet, sour, and salty taste elements all in one treat. 

Mia, our 4-year-old, doesn’t eat spicy foods but loves Tajin. As you’ll notice, she likes to eat the chile seasoning part first.

Tajin-Watermelon-pops-disneyOnly two ingredients are needed to make these tasty popsicles; a seedless watermelon and Tajin. Tajin is a seasoning that contains chile peppers, sea salt, and lime. I definitely can’t get enough of this stuff. We add it to fruit salads and even sprinkle it onto grilled corn-on-the-cobb. It takes me back to my childhood years when we would visit our family in Mexico during summer break and we’d eat or rather slurped down spicy Lucas candy and mangoneadas (traditional Mexican treat that combines mango sorbet with chamoy, lime, chile, and salt).

Instructions

  1. Slice watermelon into rectangles.
  2. Place popsicle sticks into each rectangle.

3 Summer Activities Using Cheerios®


Petmoji-Secret Life of Pets-General Mills-CheeriosAs most of you know, our little rambunctious overly energetic 4-year-old, Mia, is an animal lover. And if she had it her way, we’d literally have a zoo inside our house. We’re talking reptiles, mammals, and pretty much any animal that has roamed the face of this Earth. So when we saw the trailer for The Secret Life of Pets, we immediately knew this was something we needed to add to our summer to-do list.

If you haven’t seen the trailer, The Secret Life of Pets is a comedy about the lives pets lead after their owners leave for work or school each day. The movie comes to theaters nationwide on July 8, 2016.

So what does the movie have to do with Cheerios®?  Well, starting in July, you can find 6 The Secret Life of Pets collectible character key chains inside specially marked boxes of Honey Nut Cheerios®, Multi-Grain Cheerios®, and Regular Cheerios®.

As you can see, this little love of mine was impatiently waiting to open the box of Cheerios® we received and see which key chain she got. Apparently it’s now her favorite bracelet and refuses to take it off. 🙂

By the way, who doesn’t love Cheerios®? It’s a great low-carb cereal option for our family. But best of all, we love that the very first ingredient contains whole grain oats and it’s also gluten-free. Perfect for family members that are allergic to gluten. Not to mention, they’re ideal for little fingers to snack on and to use for kids arts and crafts.

Learning Letters

Cheerios are a perfect way to encourage learning letters. We found this neat print out of The Secret Life Of Pets and had Mia spell out the word Pets in Cheerios. We secured the Cheerios using glue dots. Glue dots are mess-free and instantly adhere to paper. But glue works just as good. Download The Secret Life Of Pets print out here.

We traced Max’s silhouette (as seen on the movie title) onto construction paper. Have your kiddo glue Cheerios to the silhouette to create a dog collar, spots, eyes, etc.. Paint over Cheerios. Peanut Butter Protein Cheerio Bars

Peanut Butter Protein Cheerio Bars

Ingredients

  • 1/2 cup PB
  • 1/3-1/2 cup Organic Honey
  • 3 cups Cheerios
  • 1 tsp Flax Seeds
  • 1 tsp Chia Seeds
  • *Hemp Seeds are a great addition as well

Instructions

  1. Line an 8 x 8 inch pan with parchment paper.
  2. Parents, combine peanut butter & honey in a large saucepan and set over medium heat. Heat until mixture just starts to simmer, about 2-3 minutes, stirring. Remove from heat and stir until mixture is well-combined. Let it cool down. Have the kids add in chia and flax seeds to the PB/honey mix.
  3. Place cereal into bowl. Fold in the PB, honey and seeds mix until evenly coated. Pour mixture into prepared pan, cover with parchment, and press firmly. Note: A roller will help to firmly and evenly pack down the mixture so the bars hold their shape. Chill in the refrigerator for a min of 1 hour. Cut into squares and serve.

Iced Mexican Coffee

Mexican-Iced-Coffee-Nescafe-Break-Routine-Patron-CafeCalling all my coffee and adult beverage aficionados! Summer is literally days away and this Iced Mexican Coffee is simply pure bliss. I mean what’s not to love? A thirst-quenching caffeinated boozy drink. Yasss!

Iced Mexican Coffee

Yield: 2

Iced Mexican Coffee

Ingredients

  • 1 cup NESCAFÉ Clásico chilled
  • 2 tbsp Almond Milk (OR milk of choice)
  • 1 shot of Coffee Liquor
  • 1 shot of Tequila (I prefer Patron XO Cafe)
  • 3 Cinnamon Sticks
  • Organic Sugar and Powder Cinnamon For Rim
  • Ice

Instructions

  1. Make 1 cup of NESCAFÉ Clásico and chill in refrigerator for 30 minutes.
  2. Mix sugar and powdered cinnamon into a small plate. Dab a little water onto rim of each glass. Turn glass upside down and place over sugar/cinnamon mix.
  3. Add 1/2 a shot of coffee liquor, 1/2 a shot of tequila and ice to each glass. Top off with 1 Tbsp milk and a cinnamon stick. Sip and enjoy!

The campaign invites us all to create little moments in the now rather than put them off for “the right time”, for “the perfect opportunity”, for the “next time.” To celebrate every moment every single day.

So I put this to the test and took the girls outside to eat our snacks (and pretend donuts) rather than eat them while running errands or staying inside while I do laundry and prep for dinner. This little outdoor picnic totally changed our moods and my four-year-old now wants to do it on a daily basis.

Coconut Crème Fraîche & Berry Gelatin

Coconut-Creme Fraiche-Berry-GelatinWith Memorial day being around the corner, I wanted to share this quick red, white and blue dessert that not only looks pretty neat on the outside but also contains some healthier ingredients on the inside. Ok – crème fraîche frosting aside. But really, who doesn’t love fresh berry desserts?? Not to mention making this recipe with my little one was tons of fun. We unintentionally turned it into a science experiment as Mia had never seen how jello is made. Love watching her learn new things. This recipe is a must!

 

Coconut Crème Fraîche & Berry Gelatin

Coconut Crème Fraîche & Berry Gelatin

Ingredients

  • Berry Gelatin:
  • 2 pouches Unflavored Gelatine 
  • 1/2 cup cold water
  • 1/2 cup boiling water
  • 1/3 cup fresh squeezed Meyer lemon juice
  • 2 tbsp organic sugar 
  • Fresh berries (raspberries, blueberries, and strawberries)
  • Silicone cupcake molds
  • Coconut Crème fraîche Frosting:
  • 1 (14 ounce) can regular coconut milk, pre-chilled the night before
  • 1/2 tbsp organic butter
  • 1/4 cup confectioners sugar
  • 1/2 tsp vanilla extract 
  • fresh mint leaves

Instructions

  1. Berry Gelatin: Sprinkle the gelatin over the cold water and, without touching it, let it soften for 5 minutes. Heat a 1/2 cup of water in a small pan until very hot and stir the softened gelatin into it. Stir this mixture over a low heat until the gelatin dissolves. Remove from the heat and stir in Meyer lemon juice. Pour a layer of gelatin into a mold and arrange some of the berries in this layer. Refrigerate for an hour. Repeat for additional layers. Before you try to invert it onto a serving plate, place the mold in hot water. If you're not serving it right away, be sure to keep it chilled.
  2. Coconut Crème Fraîche: Carefully open pre-chilled can of coconut milk and remove firm, white coconut cream layer from top, avoiding coconut water. Only the cream will be used. In a mixer, whisk butter for a couple minutes. Slowly add in confectioners sugar and coconut cream on high for a minute or until well blended. Add vanilla and blend for an additional minute.
  3. When serving, add a dollop of coconut crème fraîche, a strawberry slice and fresh mint leaves.

Frozen Protein-Banana Mini Popsicles

Chocolate Covered Banana-Popsicle-Mini-Zoku-Frozen-Treat-SnackOk – so technically it’s not summer yet but the weather sure has been acting like it in our neck of the woods. We’ve even hit the low 90s folks! And since I’m a huge fan of all things summer; I wanted to share a popsicle recipe we love to make when the temperature starts to rise.

These mini pops are definitely sweet, but balanced with protein for a healthier kick. Oh, and if your kids are allergic to nuts, not to worry, skip them altogether and just add sprinkles, shredded coconut or even granola. Frozen Protein-Banana Mini Popsicles

Prep Time: 30 minutes

Cook Time: 5 minutes

Total Time: 35 minutes

Yield: 9 Mini Popsicles

Frozen Protein-Banana Mini Popsicles

Ingredients

  • 3-4 Bananas
  • 1 Scoop Organic Protein Powder
  • Dark Chocolate Large Bar
  • Sliced Almonds, Sunflower Seeds, Pepitas, Cashews
  • Zoku Mini Popsicle Mold
  • Small Sauce Pan
  • Bowls For Toppings And Protein Powder
  • Glass Measuring Cup (to hold 2 cups)
  • Parchment Paper
  • Baking Sheet
  • Spatula/Spoon

Instructions

  1. First things first. I've found it easier to work with the banana once it's frozen via a popsicle mold. So be sure to prepare the pops a night before or a minimum 8hrs prior to dipping them into the melted chocolate. Start by peeling and slicing 4 bananas (1-2 inches). Using a spoon, place a piece of banana into the crevice of each mini popsicle mold and smash with spoon until entire crevice is covered. Repeat until all crevices are filled. Top with popsicle sticks.
  2. Prepare your work space. Let's face it, anything that involves chocolate and melted for that matter, can get super messy. I like clearing our kitchen table and having everything I need on it to make these popsicles quickly.
  3. Arrange bowls for the toppings you'd like to use (we used almonds, pepitas, and sunflower seeds) and leave a space for the bowl of melted chocolate and protein powder. Place a cookie sheet with parchment-lined paper to place your frozen choco-banana mini popscicles.
  4. Fill the bottom of a sauce pan with a couple inches of water and bring to a simmer. Place chunks of dark chocolate into a glass bowl (I used a glass measuring cup). Let the chocolate melt, stirring occasionally, until the chocolate is completely melted. Remove the sauce pan and transfer to your work station.
  5. Once you have everything prepared and ready to go, take out your popsicles from the freezer (I suggest doing a few at at time as the banana can thaw pretty quickly and get mushy if left out too long).
  6. Dip a popsicle into your protein powder bowl. The powder will stick to the banana rather quickly as it's frozen. Then immediately dip into melted dark chocolate. Be sure to have a spatula or spoon inside the melted chocolate so that you ensure the popsicle is completely covered. I also turn the popsicle as I do this. Remember to move as quickly as possible as the banana will freeze the chocolate almost instantly.
  7. Remove popsicle from melted chocolate. Use one hand to hold the popsicle and the other to grab toppings. Sprinkle toppings over the melted chocolate while rotating. Again, be sure to move quickly as chocolate will harden and the toppings won't stay put if this occurs.
  8. Place the chocolate covered popsicles onto baking sheet with parchment paper for a couple minutes. Remove the rest of the frozen popsicles from the mold and replace with chocolate covered bananas back onto the mold. Be sure not to push the chocolate frozen bananas into the mold but rather just use the mold to stand them up. Place back into freezer. Once you've covered the remaining popsicles with chocolate and toppings add them all to the popsicle mold. And viola! you've got yourself a tray of delicious healthy mini treats.

  1. Grill chicken breast the night before.
  2. Slice chicken and place into a medium size sauce pan along with the salsa verde. Bring to a boil and set aside to cool down.
  3. Slice and chop veggies. Break apart and wash butter lettuce.
  4. Place all items (salsa verde chicken, butter lettuce, veggies, mayo and Herdez salsa) onto your table. Let the kiddos dig in and create their own lettuce wraps by adding chicken, salsa, mayo and veggies on top of each piece of lettuce. **Note: It sure can get messy but the fun definitely out ways the mess**

And believe you me, there have been plenty of fails along the way but in retrospect, some good certainly came out of it. This chia blueberry banana mini muffin recipe is one of them. It’s so moist and scrumptious you would never know it’s packed with some pretty healthy ingredients, 100% vegan and most importantly egg-free for our little nugget. Cooking With Kids: Chia Blueberry Banana Mini Muffins

Cooking With Kids: Chia Blueberry Banana Mini Muffins

Ingredients

  • 1 1/2 cup organic flour
  • 1 1/2 organic coconut oil
  • 1/4 cup brown sugar
  • 1/4 cup organic sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp organic chia powder
  • 1 1/2 cup organic blueberries
  • 1 1/2 ripe bananas
  • 5 tbsp vanilla almond milk
  • **You'll also need a mini muffin pan

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease muffin pan with coconut oil or cooking spray.
  3. Mix chia powder and 1 tbsp warm almond milk and let it sit for a couple minutes until the chia powder absorbs the milk. Using your electric mixer, combine all dry ingredients (flour, sugar, salt, baking powder and baking soda) and mix. Then slowly add in warm coconut oil (it will mix better if it's in liquid form). Add in chia powder and warm milk mix. Followed by the ripe bananas. Lastly, add in the 4 tbsp of milk one at a time and mix at low speed for about a minute. Poor mix into mini muffin pan. Let the kiddos add the blueberries and then top off each muffin with more mix.
  4. Bake for 18-20 minutes or until muffins are cooked all the way. Remove from oven and enjoy!
